Bulk Amazonian fruit ingredient

Açaí NFC Juice

Clarified single-strength açaí juice for beverages, smoothies, functional formulations, frozen products and foodservice applications, with certified organic programs subject to current availability.

Ingredient overview

Açaí is processed differently from conventional fruit juice.

Açaí comes primarily from the Amazonian palm Euterpe oleracea. The small round fruit develops a dark violet-purple skin at maturity, but unlike grapes or berries, most of the fruit consists of a hard central seed surrounded by only a thin edible pulp layer.

Commercial processing therefore normally softens the fruit and uses water-assisted mechanical extraction to separate the edible material from the seed. For clarified NFC juice, much of the suspended pulp and insoluble material is subsequently removed to create a more fluid ingredient for beverage manufacturing.

  • Botanical source: Euterpe oleracea
  • Deep violet-purple fruit and extracted ingredient
  • Mild earthy, berry-like and slightly nutty sensory character
  • Clarified NFC has substantially lower solids than açaí pulp
  • Commercial products may include citric acid for pH and color control
  • Certified organic supply is commercially available

Fruit characteristics

Most of the açaí fruit is seed, making extraction and solids critical.

Fruit Structure & Extraction

Açaí is a small palm fruit with a large central seed and a relatively thin outer edible layer. Unlike apple or citrus juice production, the fruit cannot simply be pressed to obtain a large volume of free juice.

Commercial processors soften the fruit, mechanically remove edible material from the seed and use controlled amounts of water during extraction. This makes product definition especially important when comparing suppliers.

Flavor & Appearance

Açaí typically has a dark violet-purple appearance and a distinctive flavor that is less sweet than many conventional fruit juices. Commercial descriptions often emphasize earthy, berry-like and slightly nutty notes.

Clarification reduces the dense pulp texture while retaining the characteristic color and flavor required for beverage use.

Açaí should not be evaluated using the same purchasing logic as apple, grape or citrus juice. Extraction method, total solids, degree of clarification and added water are central parts of the commercial specification.

Technical profile

For açaí, solids level is often more informative than Brix alone.

Açaí naturally contains relatively little sugar and meaningful amounts of suspended solids and lipids. Because of this composition, refractometer Brix does not describe product concentration as effectively as it does for many conventional fruit juices.

Current Commercial Example

One current organic clarified açaí NFC program from Brazil lists approximately 1–3 °Brix and an ingredient statement of organic clarified açaí pulp/puree plus citric acid.

Because commercial formulations differ, buyers should define whether the project requires clarified açaí NFC, higher-solids açaí pulp or another açaí ingredient before comparing quotations.

Always use the current supplier specification and lot-specific Certificate of Analysis. Do not apply pulp-grade solids specifications directly to clarified NFC juice.

Açaí formats

Clarified NFC and açaí pulp are commercially different ingredients.

Clarified Açaí NFC

Clarified NFC is processed to remove much of the pulp and suspended solids, producing a more fluid ingredient suitable for beverages where heavy sediment or high viscosity is undesirable.

Brazilian standards describe clarified açaí at total solids of 2% or less.

Standard Açaí Pulp

Non-clarified açaí retains substantially more fruit solids and provides a dense, creamy texture. Commercial pulp classifications are based largely on total-solids concentration.

Traditional commercial grades span roughly 8% to above 14% total solids.

Açaí Concentrates & Powders

Clarified juice concentrate, freeze-dried powder and other concentrated forms are also available where manufacturers need greater solids efficiency or dry-format handling.

These formats should not be considered interchangeable with NFC without recalculating concentration and ingredient declaration.

Commercial pulp grades

Total solids help define traditional açaí concentration.

Type A / Thick

Traditional thick or special açaí contains more than approximately 14% total solids and has a dense texture and stronger fruit character.

Type B / Regular

Medium or regular açaí contains approximately 11–14% total solids and represents an intermediate commercial concentration.

Type C / Thin

Thin or popular açaí contains approximately 8–11% total solids. Additional water during extraction lowers the concentration and changes both texture and fruit-solids contribution.

These traditional pulp classifications provide useful sourcing context but are not specifications for clarified NFC juice. Identify the exact ingredient format before comparing prices or fruit content.

Major industrial applications

Where clarified açaí NFC juice can be used commercially.

Juice & Beverage Blends

Clarified açaí NFC can contribute dark color and distinctive fruit character to juice beverages, fruit blends and premium specialty drinks.

Because natural açaí is not highly sweet, it is frequently paired with apple, grape, pear, berry or tropical fruit bases.

Smoothies & Functional Beverages

Açaí is widely recognized in smoothie and specialty beverage formulations. Clarified NFC can be useful when manufacturers want a more fluid açaí component than traditional high-solids pulp.

Beverage stability, sediment and color should be evaluated through the complete shelf-life process.

Plant-Based & Dairy Beverages

Clarified açaí can provide color and fruit character in plant-based beverages, drinking yogurt and selected cultured or dairy-style products.

pH and protein stability should be validated in the complete formulation.

Frozen Beverages & Desserts

Applications include frozen beverages, sorbet, ice pops, frozen yogurt and other desserts where the characteristic dark-purple açaí profile is desirable.

Higher-solids pulp may be preferred over clarified juice when substantial body or creamy texture is required.

Cocktails & Mocktails

Clarified NFC can be incorporated into cocktail mixers, mocktail bases, spritz-style beverages and specialty bar syrups.

Açaí pairs well with berry, citrus, passion fruit, mango and other tropical flavor systems.

Syrups, Sauces & Fruit Preparations

Açaí juice can be used in dessert sauces, syrups, glazes and fruit preparations where dark fruit color and distinctive flavor are required.

For thicker preparations, traditional açaí pulp may provide more body than clarified juice.

Foodservice & Juice Bars

Foodservice operations can use açaí juice in smoothies, specialty beverages, frozen drinks and sauces without handling whole frozen fruit.

Smaller pail formats may be useful where industrial drums exceed normal batch requirements.

Açaí Bowl & Blend Systems

Clarified juice can contribute color and flavor to blended bowl systems, but conventional higher-solids açaí pulp generally provides more of the thick texture associated with traditional açaí bowls.

Manufacturers should therefore choose the ingredient based on desired solids and texture rather than the word “açaí” alone.

Commercial packaging & handling

Frozen supply is common for organic clarified açaí NFC.

Frozen Pails

One current commercial organic clarified açaí NFC program offers approximately 17.5 kg / 38.6 lb frozen pails.

This format can be useful for product development, juice bars, foodservice and lower-volume manufacturing.

Frozen Drums

Industrial clarified organic açaí NFC is commercially offered in approximately 180 kg / 396.8 lb drums for larger manufacturing runs.

Other Bulk Programs

Higher-volume or alternative packaging may be available from selected processors. Confirm whether the offered product is frozen, aseptic or otherwise processed before designing the receiving and storage system.

Cold-chain requirements and unopened shelf life vary by supplier. Follow the exact product specification for frozen storage, thawing, post-thaw handling and maximum use period.

Frequently asked

Açaí NFC juice sourcing questions

What is açaí NFC juice?

Açaí NFC juice is a single-strength açaí ingredient produced without concentrating and subsequently reconstituting the product. Commercial clarified NFC has much of the suspended pulp and solids removed to produce a more fluid beverage ingredient.

Why is açaí processing different from conventional fruit juice?

Most of the açaí fruit is a hard seed surrounded by a thin edible layer. Processors therefore soften the fruit and use water-assisted mechanical extraction to separate edible material from the seed, rather than simply pressing a fleshy fruit for juice.

What is the typical Brix of clarified açaí NFC?

One current commercial frozen organic clarified NFC product is specified at approximately 1–3 °Brix. Exact values vary by supplier, and Brix alone should not be used to compare clarified juice with higher-solids açaí pulp.

What does total solids mean for açaí?

Total solids indicate how much non-water material remains in the product and are especially useful for comparing açaí pulps. Traditional commercial pulp grades range from approximately 8% total solids to above 14%.

What is clarified açaí?

Brazilian standards describe clarified açaí as an extracted açaí beverage that has undergone technological reduction of total solids to 2% or less while preserving characteristic color, aroma and flavor.

What is bulk açaí NFC juice used for?

Major applications include juice blends, smoothies, specialty and functional beverages, plant-based and dairy drinks, frozen beverages, sorbet, mocktails, syrups, sauces and foodservice preparations.

Is açaí NFC suitable for açaí bowls?

It can contribute flavor and color, but clarified NFC has much lower solids and less body than traditional açaí pulp. Higher-solids pulp is generally more suitable where the thick texture associated with açaí bowls is required.

Is organic açaí NFC juice available?

Yes. Certified organic clarified açaí NFC is commercially available from selected processors. Request current organic certification covering the exact product being quoted.

How is commercial clarified açaí NFC packaged?

A current frozen organic program includes approximately 17.5 kg pails and 180 kg drums. Other formats may be available depending on processor and annual volume.

What information should I provide for a quote?

Specify clarified açaí NFC rather than simply “açaí juice,” together with conventional or organic grade, target Brix or total solids, approximate quantity, preferred packaging, destination and delivery timing, plus requirements for pH, acidity, clarity, ingredients, microbiology, storage, origin and certification.
